Vegan Parmesan Risotto

Ingredients:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup Arborio rice
  • 1/4 cup dry white wine (optional)
  • 4 cups vegetable broth, warmed
  • 1/3 cup Nateure’s Plate Vegan Parmesan
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions:

  1. Heat olive oil in a large saucepan over medium heat. Add onion and cook until translucent, about 3-4 minutes.
  2. Stir in garlic and Arborio rice, cooking for 1-2 minutes to toast the rice.
  3. If using, pour in white wine and cook until absorbed.
  4. Begin adding warm vegetable broth one ladle at a time, stirring constantly and allowing the liquid to absorb before adding more. This process takes about 20 minutes.
  5. Once the rice is creamy and tender, stir in Vegan Parmesan and season with salt and pepper.
  6. Garnish with parsley and serve immediately.
