Ingredients:
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup Arborio rice
- 1/4 cup dry white wine (optional)
- 4 cups vegetable broth, warmed
- 1/3 cup Nateure’s Plate Vegan Parmesan
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions:
- Heat olive oil in a large saucepan over medium heat. Add onion and cook until translucent, about 3-4 minutes.
- Stir in garlic and Arborio rice, cooking for 1-2 minutes to toast the rice.
- If using, pour in white wine and cook until absorbed.
- Begin adding warm vegetable broth one ladle at a time, stirring constantly and allowing the liquid to absorb before adding more. This process takes about 20 minutes.
- Once the rice is creamy and tender, stir in Vegan Parmesan and season with salt and pepper.
- Garnish with parsley and serve immediately.
