Ingredients:
- 4 cups mixed greens (spinach, arugula, and romaine work well)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/3 cup Kalamata olives
- 1/3 cup Nateure’s Plate Vegan Feta, crumbled
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- In a large salad bowl, combine greens, cherry tomatoes, cucumber, red onion, and olives.
- Top with crumbled Vegan Feta.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately for a refreshing and flavorful meal.
